It's that time again... time for my "weekly" Vegetable of the Week (ah ha ha ha ha!)
Black beans are so awesome - they are cheap and yummy and so very versatile. They are a fabulous source of folate, fiber, and like all beans a great non-meat source of protein. Aside from helping digestion, eating a high fiber diet can help regulate blood sugar levels and reduce your chances of heart disease. And did you know the darker the bean, the higher in antioxidants they are? Well, that makes black beans top notch!
Generally canned vegetables have lost many of their nutrients and are full of sodium (so choose frozen if you can't get fresh!) but beans are an exception. Canned beans are just so much more convenient than dried, and there isn't much difference nutritionally - just read the label (Whole Foods' 365 brand organic canned black beans have 80 mg sodium, while Walmart's Great Value brand have 370 mg! And the price difference is less than 20 cents a can.)
For lunch on weekends, I spread some refried black beans on a whole wheat tortilla, top it with fresh baby spinach and cheese and microwave, and I have a healthy yummy lunch for the kids that takes 30 seconds to make. Or I skip the spinach and add avocado to make a flower. I made this yummy and quick dinner the other night.
I usually have a big stash of canned beans in the pantry. There's nothing like beans and rice for an easy pantry meal! Just mix some rice and beans with a little sea salt. Sometimes I stir in roasted sweet potatoes. Sometimes I saute some garlic and red bell pepper and add that. And fresh cilantro. Or corn. Or onion and cumin. Or whatever. It's not a recipe, it's just an easy way to fix a healthy vegetable!

What To Do?
For the most part, I use my mama instincts and my knowledge of my own kids to figure out how to parent. Lord knows, I'm learning along the way and I've discovered things are different with each kid. But generally I feel like I know what to do.
But every now and then I'm not so sure what to do.... Take this for example

Today is the first day in months that we haven't had to be somewhere. We should have gone to church, but we all needed a day off - a day at home. The girls have been up since 7 a.m. playing beautifully together. Other than a quick break for some toast with almond butter and milk, they have not wanted anything. They have not fought. They have not whined. They've just been playing. Together. Happily. Self-sufficiently.
And in the process they have trashed the house, which was clean when I went to bed last night. Normally, you would hear me all day long, "Girls! If you're done with those crayons, come back in here and pick them up!"
It's noon now, and I have not interrupted them all morning. I think about how nice it must be to be 3 or 5 years old and to just play, without having a grown up fussing at you all the time. And interrupting perfect sister playmates feels kind of like waking a sleeping baby.
So I'm torn... I want them to learn to pick up after themselves, and I certainly don't want to pick up after them. But I also want to cherish days like today, when they are getting to do what I think kids their age should be doing - just playing at home with their siblings.

My Funny Kids
Sophia ~
She has been trying and trying to wiggle one of her teeth loose, and the other day she told me she actually tried to use a book to knock it out (!) I assumed one of her friends must have lost a tooth, and when I asked her why she was so anxious to lose one, she said "Mom, it's SO COOL! You can hold a straw right there in the gap!"
Amelia ~
Last night after dinner, like every night, I told Amelia "go potty and get in the bathtub." I finished putting Henry to bed and walked into the bathroom. Amelia had gone potty and gotten into the bathtub with her dress on! It looked so funny I totally messed up the being mad thing and started laughing.
Henry ~
Last night around 3 a.m., Henry decided he wanted to learn to crawl, so he did. On my bed. He would crawl to me and then laugh in my face. And I'd push him away and go back to sleep, and he'd crawl right back and laugh in my face. Again, it was too cute to get mad about, though I did finally beg Davis to take him away so I could get a little sleep (because the first half of the night Henry woke up every hour to nurse. Growth spurt!)

Rally Day
One of my favorite days of the year is "Rally Day" at our church - it's a day when, after the church service, everyone gathers in the big hall to look at exhibits showing all of the ministries and other things going on at the church... and eat fried chicken! The church supplies the fried chicken and tea and lemonade, we bring the sides and desserts.
My kids LOVE fried chicken. And for the most part, there are only two times a year they get to eat it - Rally Day and the church annual meeting in January. I had to tell Amelia to stop at the bone, and Sophia stole the chicken off my plate when I turned around to take care of Henry!
Rally Day is also the first day of Sunday School after summer vacation, and I have too much fun meeting my new batch of three year olds. I love three year olds!! The beginning of the year is so funny, because I realize how far these kids come in one school year, when I think back on how last year's students were acting at the end of the year, compared to these new kiddos. It's going to be a great year, I can tell!
Our curriculum focuses more on allowing children to experience God and worshiping together, rather than just teaching them Bible stories (we just use the stories as a backdrop to the bigger message). And I can tell you, there are times I feel closer to God in that room, sitting criss cross applesauce on the floor, than just about anywhere else.
For where two or three are gathered together in my name, there am I in the midst of them. Matthew 18:20
Normally Davis comes with us for Rally Day, but he had to work this year. It was a little bit of a challenge to wrangle the three kids, my Sunday School class, and man the table for our ministry - but I managed with lots of awesome friends to help (random people kept bringing me Amelia ha ha!) and I even managed to eat some friend chicken and those WICKED Kroger sugar cookies (they are like 900 calories per cookie, for real, but sooo yum!) You know, these ones
The kid's got good taste.
Poor Henry, he was DONE by the time I got around to taking his picture.
In other news - can you tell how Sophia feels about Kindergarten after one full week?

And I am SUPER excited about this week. You know why? Because there is NOTHING going on! It's just a week, with school and work during the day and dinner and bedtime at night. Sophia's school is actually have a back to school party (another one!) at a mini golf place on Saturday, but we're not going. It's really hot, I will have three little kids by myself, we have been running from activity to activity for weeks (months). In case you had not noticed, I'm a big believer in sticking to our routines and not over-scheduling. I love the enthusiasm of her new school, but I also love my sanity.

Food
The front of our pantry looks like this
which means the inside of our pantry is full of pretzel sticks and little boxes of raisins and other after school snacks. And my menu planning is once again centered around food that can be made between when I get home from work and when dinner is served - at exactly 6:00 pm - with a flurry of little people pulling at my skirt.
I thought I would share my menu for this week, in case you need a little inspiration. You might notice that the hundred degree heat has gotten to me, which really just makes me want to eat salads every night. But alas, I'm married to a man, and men complain if they don't get their share of "meat separate meals" as mine says!

And now, for a recipe that's actually mine...
I had some overripe bananas and a surplus of blueberries, and a need for more after school snacks. So I made these - they are yummy, moist, and relatively healthy :)
Blueberry Banana Mini Muffins
2 very ripe bananas, mashed
2 eggs, lightly beaten
1/3 cup sugar
1/3 cup melted butter
1 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 375 degrees and grease mini muffin pan (this recipe made about 28 mini muffins).
Mix mashed bananas, sugar, eggs, sugar and butter in a large bowl. Add blueberries. Mix remaining dry ingredients in a separate bowl, then carefully mix into blueberry mixture. Spoon into muffin pan and bake for 11 minutes.

Thursday
In case you were losing sleep over it, I did finish Sophia's nap mat cover/blanket/pillow
around 1:00 am, because Henry was screaming at me to stop sewing through most of it, which was distracting. But Sophia loved it. That pink fabric is THE softest baby-blanket type fabric I have ever felt.
This week has completely worn me out, and there's one more day! AAK! I have been running literally from one meeting to the next all day at work, which means I have to catch up on email late at night. But I'm also the chair of a committee at my church and on a state policy task force that is in the final stages of preparing some important documents, and the only time I can work on those things is late at night. And then, emergency nap mat covers come along!
Sophia is having a great week though. She is SO happy in Kindergarten, she is making friends and loves her teacher - I just can't even tell you what a huge relief that is! I love her school. LOVE.
I'm going to just add random pictures of Henry eating spaghetti to this post, because they're more interesting than my ramblings. I checked Google Analytics tonight, I have more people reading my blog, but no one is commenting. Hi lurkers! Also, whoever searched for "how do I get my act together" - I'm sorry I don't have the answer. And whoever searched "breastfeeding random kids" - good luck with that.
One thing I'm realizing after three whole days of having a child in school... I totally took for granted how laid back the last five years were. No, I mean not the whole bar exam, out of state surgeries, high stress big law firm job, three babies in four and a half years, kind of laid back... I mean, our lives were mostly dictated by us. Yes, I worked, and I worked a lot of hours, but my exact hours have been set by me. Our schedule was always flexible. And now - wow - I can tell the next (many, many many, I can't even count!) years will be ruled by school!
Sophia gets home at 3:30 and I get home around 5:00, and getting everyone fed and bathed and tooth brushed and read to and pajama'd up and in bed by 7:00 is HARD. But Sophia really still needs 12 hours of sleep, so we've managed so far. I am frightened of what it will be like when there are three kids in school and hours of homework and soccer and ballet and piano and.... Now I know what my dear friend meant when she told me last year "you're in the easy years!"
Yes, it was easier in a lot of ways. But this is REALLY REALLY fun. I can't wait to come home at the end of the day and hear all about Sophia's day. Tonight was Meet the Teacher night as school and I got to hear about some of what the kids are doing right now. So awesome! Tomorrow I have some work to do at the church, so I'm going to leave work a little early to pick Sophia up and do that. And then - WEEKEND! I told Sophia she could stay up a little later Friday night, because she has been missing her sister and wanting some more time at home to just play. We might even play hooky from art class Saturday and just stay at home and have a pajama day.
Notice how I just could not wait for school to start, and now I'm counting down to the weekend??

Just Your Typical First Day of Kindergarten
It was such a bigger, better, crazier, sadder day than I had anticipated! Sophia has been going to preschool for a couple of years, so the whole handing your child off to someone else thing was pretty cool with me. But no, it was really so different today.
Sophia popped out of bed this morning and said "Mom, you are NOT going to believe this! I'm FIVE years old, and I'm going to KINDERGARTEN!" and I said "No way!" and she said "IT'S TRUE!" *big huge grin on her face*
Then after a big breakfast, she got dressed in her uniform and she went and stood in front of the mirror smiling for about five minutes. She had been waiting and waiting to wear her uniform for weeks. Then she came out of her room *big huge grin on her face* and said "Hi Daddy!"
We got to school, and I could tell, she was a little tiny bit nervous and a lot excited.
But she found her hook on the wall and hung up her backpack
and she marched right into that classroom and sat down in her spot, and Miss Theresa sat down beside her
Sophia looked up at me *big huge grin on her face* with just a teeeeny look of worry. I gave her a kiss, then kissed the palm of her hand, so if she needed a kiss later she could put it on her cheek, and she said "bye!"
I turned around smiling, took one step outside of her classroom and looked back (that was my mistake) - she looked SO big and grown up in there, with her little jumper and her ponytail and she didn't even look back at me, and I BURST into tears. My friend Miss Kelly teaches pre-K and her classroom is right next to Miss Theresa's, she was standing in her doorway and she gave me a big hug. And as I walked to the cafeteria for a new parent orientation, I ran into five more friends, and every time I did I said, "five years just went by so fast," and started crying again.
After orientation I rushed to work and was busy, busy. I thought everything was fine. I was over being sad, but I couldn't wait to see her. Well, then... I got in the carpool line and saw this
Those precious uniformed kiddos with backpacks on, marching in their little line, they looked so cute and so BIG - I started again with the crying. But only for a second. Because then, Sophia got in the car *BIG huge grin on her face*
And she said "AWESOME."
My friend Michele, whose kids are a little older, gave me one piece of advice about having kids in school: "Have FOOD in the car." She said, "they get in the car and are immediately starving and there's not even time to go down to Sonic, they need something right away!" So I was prepared, and she was right!
I heard all about circle time and chapel and Spanish and playground and eating in the cafeteria and how Sophia (who has taken maybe 3 naps TOTAL in the past 3 years) took an hour long nap. She talked a mile a minute! I'm so happy that is already making new friends - she said "Claire and I are best friends. Do you want to know how we became friends? After chapel we just looked at each other, and then we started doing all the same things like twins, and we've been friends ever since." Not only is that so adorable, but I'm super jazzed because I love Claire's mom and I was hoping they would be friends!
And I have never seen Sophia more confident and proud.
Even though I got the mom pleeeeeeease stop with the pictures look.
But then, I heard about how everyone had a blanket and pillow with their nap mat except Sophia and one other girl, and she had to have one immediately. So I decided it would be easier and cheaper just to make her a nap mat cover with blanket and pillow... but we went to the fabric store and spent $50 on materials and at 10:30 tonight my dining room table looks like this
Sophia brought home a book from the school library, and after giving us all a lecture about how we shouldn't color in books, shouldn't drop books, mustn't rip up books, shouldn't eat while reading books, and (are you ready?) shouldn't sneeze on books (!) we read her library book after dinner and bath. And then she CRASHED. And I started sewing.

Sneak Peak and Pictures
Sophia had her "sneak peak" today, which was a little ice cream social and chance for the kids to see their classrooms, teachers, and classmates and for us parents to sign up to volunteer for too many things ha!

I didn't get any pictures of Sophia in her new classroom, because I was busy keeping the girls from completely taking the room apart. They were a little too excited, but in a good way. Sophia CRASHED tonight - which is exactly what I needed to do!
I tried and tried to get a picture of all three kids when we got home, but I couldn't do it. In every single one of them, one of the kids is making a crazy face.
I can do two, but not three!
Then I tried to get pictures of just Henry, and usually this happened
Those tootsies are just WAY more interesting than posing for pictures, Mom!
And I found this cool Photoshop action - it makes Polaroids! Did you have a Polaroid camera? I had one I found at a garage sale in the 4th grade, and I LOVED that thing.
Well, my goal was to get all caught up on laundry before school started... I didn't make it, but I can get one more load done before bed!

It's our last weekend before Summer Vacation is OVER! Do I sound a little excited about that? Sorry.
It's been fun. The girls and I got out our summer list and reviewed it. Not too bad. We're going to try to squeeze in a few more little things to check off our list tomorrow and Monday. We did make a rainbow cake for my friend Ashley for her birthday this summer. She was feeling down, so I kidnapped her daughter and we made her a cake - she thought it was a lovely white cake.
And when she cut into it, she was delighted. In fact, she said it was the best cake she ever got, even better than the Hello Kitty cake she got in second grade. The best part was watching three little girls giggle their way through dinner waiting to reveal the big secret.
What else are we up to? My big goal: to get ALL the laundry caught up this weekend. I'm not convinced that's possible with three kids, but I'm trying.
We do have all of Sophia's uniforms washed and ready to go.
And an army of molasses mini muffins in the freezer, standing by for after school snacks.
Amelia got her fingernails done too. Now we call her Miss Strawberryfingers.

Sophia is cracking me up these days. If I'm ignoring her and she wants to get my attention, she says "excuse me, your majesty" and does a little bow - how can I possibly ignore that?! Amelia takes a different approach - if I ignore her, she un-invites me to her birthday party (in January) and says I'm not her friend anymore. Too bad for her, because no mommy = NO CAKE.
I checked on the girls a little while ago and found her like this
she insists on sleeping with that flashlight. I love that I can take pictures of my sleeping kids, with a flash, and not wake them up.
Henry. He loves being a source of entertainment for us all. See?
Does this seem like the most random post ever? That's because this is how my life feels right now. Soon. Very, very soon, we will have a routine again. Actually, Amelia doesn't start school until next month. *sigh*

Henry the Six Month Old!
While we were in Texas, Henry turned six months old. For weeks, Sophia has been planning his half birthday party. She decided since he loves milk best of all, we should have a milk-party, complete with milkshakes for everyone (except the guest of honor of course!)
We sang Happy Half Birthday and celebrated with our Texas friends on Saturday.
Henry, Henry, he's our little baby bumpkin. Except it seems like he's not so little anymore. In fact, the other morning I took a shower, and when I came out of the bathroom, he was surfing the internet!
He's sitting up very well
At the doctor today, he was in the 50th percentiles all around. He still loves chomping on whatever we're eating
but we've also started giving him some organic brown rice cereal sometimes to top him off when he seems extra hungry, and he DIVES for the spoon
He's such a boy already! He is fascinated with mechanical things and I just find him really exploring things in a different way than the girls ever did
He's still not a great sleeper, but he's completely adorable, so I just can't hold it against him. Here he was late at night at the hotel Sunday night
It's hard to believe half a year has already gone by! But Henry has just fit into our family so perfectly, it's also kind of like he's been here forever.Tonight I'm going to a birth class at our midwife's place to tell his birth story, so I'm re-reading it to refresh my memory. It's funny, when she called me Monday to ask me to come speak, I guess I sounded so surprised to hear from her, after I said "oh hi!" she said "don't worry, you're not pregnant!" Ha ha ha, she knew what I was thinking!
A year ago today, Henry looked like this - he was waving that little arm!!
