When I was pregnant with Henry, I craved oranges every day - when my dad was in Florida he sent me a box, and my friend Karla sent me some from California (guess what? The CA ones were better!) Well, when I went to Whole Foods Friday I bought four oranges, and now only one remains.
I really didn't feel up to taking the kids to church by myself this morning (Davis works Sundays), so we are having a lazy Sunday. It's so lovely outside, the girls have mostly been playing in the backyard. But we also broke out a new box of crayons
and the kids made forts out of pillows.
We had a giant chopped veggie salad. Inspired by this. I made my dressing with just crushed garlic, Trader Joe's Seasoned Rice Wine Vinegar, and olive oil. And in the salad - carrots, radishes, English cucumber, turnip, green cabbage, and snap peas. For Henry's portion, I chopped the hard raw things a little smaller.
And THEN! The girls wanted to bake cookies and I had an almond/coconut craving, but I could not find any recipes that seemed like what I wanted. I'm sure there's one out there somewhere. But I couldn't find it. So I made one up, and it was delish! These cookies made Henry clap.
Very Almond Coconut Cookies
1 stick butter, at room temperature
1/2 cup sugar
1 egg
2 teaspoons almond extract
1 1/4 cups flour
1/2 sweetened coconut flakes*
sliced almonds
Preheat oven to 375 degrees.
Beat the butter and flour at medium speed until fluffy. Add the egg and almond extract and continue beating until well combined. Add the flour and beat at low speed until just combined, then add coconut and beat at low until combined.
Form balls of dough ~ 1 tablespoon and place on parchment paper lined baking sheet. Flatten slightly and press a couple of sliced almonds on top. Bake 9 minutes. Let cool (some cookies are good warm, these are better cooled).
*I only had unsweetened, so I combined 1 teaspoon boiling water with 1 teaspoon sugar in a bowl with the coconut and covered with cling wrap while I made the the rest of the cookies.
